Decadent chocolate cookies filled with sweet cherry preserves, topped with a rich chocolate coating.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup chocolate chips
  • 1/2 cup cherry preserves

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the egg yolk and vanilla extract.
  4. Gradually add the flour and salt, mixing until well combined.
  5. Roll the dough into 1-inch balls and place them on a baking sheet.
  6. Make an indentation in the center of each cookie using your thumb.
  7. Fill each indentation with cherry preserves.
  8. Bake for 12-15 minutes until the edges are lightly golden.
  9. In a microwave-safe bowl, melt the chocolate chips until smooth.
  10. Dip the top of each cookie in the chocolate and let cool on a wire rack.

Notes

  • For a variation, try using raspberry preserves instead of cherry.
  • Store cookies in an airtight container at room temperature.
