Ingredients

  • 1 cup dark chocolate chips
  • 1/2 cup coconut oil
  • 1/2 cup maple syrup
  • 2 large eggs
  • 1/2 cup almond flour
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a microwave-safe bowl, melt the dark chocolate chips and coconut oil together until smooth.
  3. In a mixing bowl, combine the pureed beetroot, maple syrup, and eggs, mixing well.
  4. Add the melted chocolate mixture to the beetroot mixture and stir until combined.
  5. In a separate bowl, whisk together the almond flour, cocoa powder, baking powder, and salt.
  6. Gradually fold the dry ingredients into the wet ingredients until just combined.
  7. Pour the batter into the prepared baking tray and spread evenly.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Let cool, then cut into bite-sized pieces.
