Ingredients
Scale
- 2 cups cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups milk
- 1/4 cup vegetable oil
- 2 large eggs
- 1 cup corn kernels (fresh, frozen, or canned)
Instructions
- Preheat your oven to 400°F (200°C) and prepare a 9×5-inch loaf pan by greasing it or lining it with parchment paper.
- In a spacious bowl, mix the cornmeal, all-purpose flour, sugar, baking powder, and salt together until thoroughly blended.
- In a separate bowl, combine the milk, vegetable oil, and eggs, whisking until smooth and uniform.
- Gradually add the wet ingredients to the dry mixture, stirring gently until just incorporated; a few lumps are fine.
- Carefully fold in the corn kernels to ensure they are evenly mixed throughout the batter.
- Transfer the batter into the prepared loaf pan, using a spatula to level the surface.
- Bake for 25-30 minutes, until the top is golden brown and a toothpick inserted in the center comes out clean.
- Let the loaf cool in the pan for about 10 minutes before moving it to a wire rack to cool completely.
Notes
- For a cheesy flavor, incorporate 1 cup of shredded cheese (such as cheddar or pepper jack) into the batter before baking.
- For a hint of sweetness, add 1/2 cup of chopped jalapeños or diced bell peppers for a spicy twist and additional flavor.
