Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/4 cup collagen peptides
  • 1/3 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts or seeds (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, combine the rolled oats, almond flour, collagen peptides, baking powder, and salt.
  3. In another bowl, whisk together the honey or maple syrup, melted coconut oil, lemon juice, and lemon zest.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined. Fold in the nuts or seeds if using.
  5. Transfer the mixture to the prepared baking pan and spread it evenly.
  6. Bake for 20-25 minutes, or until the edges are golden brown.
  7. Let cool completely in the pan before slicing into bars.
