- 1/3 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1/4 cup fresh lemon juice

- 1/4 teaspoon salt
- 1/2 cup chopped nuts or seeds (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a large bowl, combine the rolled oats, almond flour, collagen peptides, baking powder, and salt.
- In another bowl, whisk together the honey or maple syrup, melted coconut oil, lemon juice, and lemon zest.
- Pour the wet ingredients into the dry ingredients and stir until well combined. Fold in the nuts or seeds if using.
- Transfer the mixture to the prepared baking pan and spread it evenly.
- Bake for 20-25 minutes, or until the edges are golden brown.
- Let cool completely in the pan before slicing into bars.
Notes
- Store the bars in an airtight container in the refrigerator for up to one week.
- These bars can be frozen for longer storage; simply wrap individually before freezing.
