Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup sharp cheddar cheese, shredded
  • 3/4 cup whole milk
  • 1 large egg
  • For the spiced honey butter:
  • 1/2 cup unsalted butter, softened
  • 1/4 cup honey
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper (optional)
  • Pinch of salt

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking powder, salt, and black pepper.
  3. Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.
  4. Stir in the shredded cheddar cheese until evenly distributed.
  5. In a separate bowl, whisk together the milk and egg. Pour this mixture into the dry ingredients and stir until just combined. Do not overmix.
  6. Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together. Pat it into a 1-inch thick circle.
  7. Cut the dough into 8 wedges and place them on the prepared baking sheet.
  8. Bake for 15-20 minutes, or until the scones are golden brown on top.
  9. While the scones are baking, prepare the spiced honey butter by mixing the softened butter, honey, cinnamon, cayenne pepper (if using), and salt in a small bowl until smooth.
  10. Once the scones are done, remove them from the oven and let them cool slightly before serving with the spiced honey butter.

Notes

  • For a herbaceous twist, add 1 tablespoon of chopped fresh chives or rosemary to the scone dough.
  • If you prefer a sweeter butter, increase the honey to 1/3 cup and add a splash of vanilla extract for extra flavor.
