- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup unsalted butter, cold and cubed
- 1 cup sharp cheddar cheese, shredded
- 3/4 cup whole milk
- 1 large egg
- For the spiced honey butter:
- 1/2 cup unsalted butter, softened
- 1/4 cup honey
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper (optional)
- Pinch of salt
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the flour, baking powder, salt, and black pepper.
- Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.
- Stir in the shredded cheddar cheese until evenly distributed.
- In a separate bowl, whisk together the milk and egg. Pour this mixture into the dry ingredients and stir until just combined. Do not overmix.
- Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together. Pat it into a 1-inch thick circle.
- Cut the dough into 8 wedges and place them on the prepared baking sheet.
- Bake for 15-20 minutes, or until the scones are golden brown on top.
- While the scones are baking, prepare the spiced honey butter by mixing the softened butter, honey, cinnamon, cayenne pepper (if using), and salt in a small bowl until smooth.
- Once the scones are done, remove them from the oven and let them cool slightly before serving with the spiced honey butter.
Notes
- For a herbaceous twist, add 1 tablespoon of chopped fresh chives or rosemary to the scone dough.
- If you prefer a sweeter butter, increase the honey to 1/3 cup and add a splash of vanilla extract for extra flavor.
