Ingredients

  • 1 teaspoon sea salt
  • 1/2 cup unsalted butter, chilled and diced
  • 1/4 cup ice-cold water
  • 1 cup scallions, finely chopped
  • 1 tablespoon extra virgin olive oil
  • 1 cup crumbled feta cheese
  • 1 teaspoon freshly ground black pepper
  • 1 egg, beaten (for glaze)

Instructions

  1. In a mixing bowl, whisk together the flour and sea salt. Incorporate the chilled butter using your fingertips or a pastry cutter until the mixture resembles small pebbles. Slowly pour in the ice-cold water, mixing until the dough forms a cohesive ball. Shape it into a disk, wrap it in plastic, and chill in the refrigerator for at least 30 minutes.
  2. Meanwhile, heat the olive oil in a frying pan over medium-high heat. Add the chopped scallions and sauté until they are tender and slightly charred, about 5 minutes. Remove from heat and allow to cool.
  3. Preheat the oven to 400°F (200°C).
  4. In a separate bowl, combine the cooled scallions, crumbled feta, and black pepper. Stir until well mixed.
  5. On a lightly floured surface, roll out the chilled dough to a thickness of about 1/8 inch. Use a 4-inch round cutter to create circles.
  6. Spoon a generous tablespoon of the scallion and feta mixture onto the center of each dough circle. Fold the dough over to form a half-moon shape, pressing the edges firmly to seal. Use the tines of a fork to crimp the edges for added flair.
  7. Arrange the pastries on a parchment-lined baking sheet. Brush the tops with the beaten egg for a shiny finish.
  8. Bake in the preheated oven for 20-25 minutes or until the pastries are golden and flaky. Allow to cool for a few minutes before serving.
