- 1 large head of cauliflower
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup pistachios, finely chopped
- 1 teaspoon lemon zest
Instructions
- Preheat grill to medium-high heat.
- Remove leaves from cauliflower and slice into 1-inch thick steaks.
- In a bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Brush oil mixture over both sides of cauliflower steaks.
- Place steaks on the grill and cook for 5-7 minutes per side, until charred and tender.
- In a separate bowl, mix chopped pistachios with lemon zest.
- Remove cauliflower from grill and sprinkle with pistachio dust before serving.
Notes
- For additional flavor, marinate the cauliflower in the oil mixture for 30 minutes before grilling.
- Serve with a side of your choice or over a bed of greens.
