Delicious charred lemon cauliflower steaks topped with a crunchy pistachio dust.

Ingredients

  • 1 large head of cauliflower
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup pistachios, finely chopped
  • 1 teaspoon lemon zest

Instructions

  1. Preheat grill to medium-high heat.
  2. Remove leaves from cauliflower and slice into 1-inch thick steaks.
  3. In a bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. Brush oil mixture over both sides of cauliflower steaks.
  5. Place steaks on the grill and cook for 5-7 minutes per side, until charred and tender.
  6. In a separate bowl, mix chopped pistachios with lemon zest.
  7. Remove cauliflower from grill and sprinkle with pistachio dust before serving.

Notes

  • For additional flavor, marinate the cauliflower in the oil mixture for 30 minutes before grilling.
  • Serve with a side of your choice or over a bed of greens.
