- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 1/3 cup champagne
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease and line a jelly roll pan with parchment paper.
- In a bowl, whisk together the flour, baking powder, and salt.
- In a separate bowl, beat the eggs and gradually add the granulated sugar, mixing until light and fluffy.
- Stir in the champagne and vanilla extract, then gently fold in the dry ingredients until just combined.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 12-15 minutes, or until the cake is golden and springs back when touched.
- Remove from the oven and immediately turn out onto a clean kitchen towel dusted with powdered sugar.
- Roll the cake up in the towel and allow it to cool completely.
- Meanwhile, whip the cream with powdered sugar and vanilla until stiff peaks form.
- Once cooled, unroll the cake and spread the whipped cream filling evenly. Re-roll the cake and place it seam-side down.
- Chill before serving.
Notes
- Dust with additional powdered sugar before serving for a beautiful presentation.
- This cake can be made a day in advance and stored in the refrigerator.
