  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/3 cup champagne
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a jelly roll pan with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, beat the eggs and gradually add the granulated sugar, mixing until light and fluffy.
  4. Stir in the champagne and vanilla extract, then gently fold in the dry ingredients until just combined.
  5. Pour the batter into the prepared pan and spread evenly.
  6. Bake for 12-15 minutes, or until the cake is golden and springs back when touched.
  7. Remove from the oven and immediately turn out onto a clean kitchen towel dusted with powdered sugar.
  8. Roll the cake up in the towel and allow it to cool completely.
  9. Meanwhile, whip the cream with powdered sugar and vanilla until stiff peaks form.
  10. Once cooled, unroll the cake and spread the whipped cream filling evenly. Re-roll the cake and place it seam-side down.
  11. Chill before serving.

  • Dust with additional powdered sugar before serving for a beautiful presentation.
