- 12 ripe figs, cut in half
- 2 tablespoons unsalted butter
- 2 tablespoons maple syrup

- 1 teaspoon fresh thyme leaves (plus extra for decoration)
- Sea salt and freshly cracked pepper to taste
- Extra virgin olive oil for drizzling
Instructions
- Begin by heating your oven to 400°F (200°C).
- Place the slices of bread on a baking tray and drizzle with olive oil. Bake for 5-7 minutes until they are crisp and golden brown.
- In a frying pan over medium heat, melt the butter. Add the halved figs and sauté for about 3-4 minutes until they soften slightly.
- Pour the maple syrup and red wine vinegar over the figs, then add thyme, sea salt, and pepper. Continue cooking for another 2-3 minutes, stirring gently until the figs are beautifully caramelized.
- Generously spread the creamy goat cheese onto each toasted bread slice.
- Spoon the caramelized figs over the goat cheese, making sure each slice gets a good amount.
- Finish with a sprinkle of fresh thyme leaves and serve right away for the best flavor.
