- 6 large eggs
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon prepared horseradish
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon hot sauce
- 1/4 cup panko bread crumbs
- 1/4 cup vegetable oil for frying
Instructions
- Boil eggs for 10-12 minutes, then cool in ice water.
- Peel the eggs and slice in half, removing the yolks.
- In a bowl, mash yolks and mix with mayonnaise, mustard, horseradish, Cajun seasoning, and hot sauce.
- Fill egg whites with the yolk mixture.
- Coat filled eggs in panko bread crumbs.
- Heat oil in a pan and fry the eggs until golden brown.
- Drain on paper towels and serve.
Notes
- For extra flavor, add chopped green onions to the filling.
- Serve with additional hot sauce on the side.
