Decadent cookie cups filled with rich buttery ganache.

Ingredients

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup heavy cream
  • 2 cups chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs, one at a time, then stir in the vanilla.
  4. In another bowl, whisk together the flour, baking powder, and salt; gradually add to the creamed mixture.
  5. Divide the dough into muffin cups and press centers down to create a cup.
  6. Bake for 10-12 minutes until edges are golden.
  7. In a saucepan, heat the heavy cream until it just begins to simmer, then pour over the chocolate chips.
  8. Let sit for a few minutes, then stir until smooth.
  9. Pour ganache into the cookie cups and let set.

Notes

  • For a richer flavor, use dark chocolate for the ganache.
  • These can be made ahead of time and stored in an airtight container.
