- 1 cup unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract

- 1 teaspoon baking powder

- 1 cup heavy cream
- 2 cups chocolate chips
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs, one at a time, then stir in the vanilla.
- In another bowl, whisk together the flour, baking powder, and salt; gradually add to the creamed mixture.
- Divide the dough into muffin cups and press centers down to create a cup.
- Bake for 10-12 minutes until edges are golden.
- In a saucepan, heat the heavy cream until it just begins to simmer, then pour over the chocolate chips.
- Let sit for a few minutes, then stir until smooth.
- Pour ganache into the cookie cups and let set.
Notes
- For a richer flavor, use dark chocolate for the ganache.
- These can be made ahead of time and stored in an airtight container.
