Instructions
- Begin by mixing the flour and sea salt in a large bowl. Incorporate the cold butter using a pastry cutter or your fingertips until the mixture resembles small pebbles.
- Slowly drizzle in the chilled water, mixing gently until the dough forms. Shape the dough into a flat disc, wrap it in plastic, and let it chill in the refrigerator for at least half an hour.
- Preheat your oven to 375°F (190°C) while you prepare the pastry.
- On a lightly floured surface, roll the dough out to a thickness of about 1/8 inch. Use a round cutter to create circles that fit snugly into a muffin tin, pressing the dough into the base and sides of each cup.
- In a separate bowl, combine the brown sugar, golden syrup, beaten egg, vanilla extract, and nutmeg, whisking until the mixture is well blended.
- If desired, add walnuts or cranberries to the bottom of each pastry shell before pouring the filling mixture over them, ensuring each shell is filled to about three-quarters full.
- Bake in the preheated oven for 20-25 minutes, or until the filling is firm and the tops are a lovely golden hue.
- Let the sweet pastry pies cool in the tin for about 10 minutes before carefully transferring them to a wire rack to cool completely.
