Instructions

  1. Begin by mixing the flour and sea salt in a large bowl. Incorporate the cold butter using a pastry cutter or your fingertips until the mixture resembles small pebbles.
  2. Slowly drizzle in the chilled water, mixing gently until the dough forms. Shape the dough into a flat disc, wrap it in plastic, and let it chill in the refrigerator for at least half an hour.
  3. Preheat your oven to 375°F (190°C) while you prepare the pastry.
  4. On a lightly floured surface, roll the dough out to a thickness of about 1/8 inch. Use a round cutter to create circles that fit snugly into a muffin tin, pressing the dough into the base and sides of each cup.
  5. In a separate bowl, combine the brown sugar, golden syrup, beaten egg, vanilla extract, and nutmeg, whisking until the mixture is well blended.
  6. If desired, add walnuts or cranberries to the bottom of each pastry shell before pouring the filling mixture over them, ensuring each shell is filled to about three-quarters full.
