- 2 cups grated carrots
- 1 cup vegetable oil
- 2 cups all-purpose flour
- 2 cups sugar
- 4 large eggs
- 1 tablespoon baking powder
- 1/2 cup cocoa powder
- 1/2 cup heavy cream
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F (175°C).
- In a blender, combine grated carrots, oil, eggs, and sugar. Blend until smooth.
- In a large bowl, mix flour, baking powder, and cocoa powder.
- Pour the carrot mixture into the dry ingredients and mix until combined.
- Pour the batter into a greased cake pan.
- Bake for 40-45 minutes or until a toothpick comes out clean.
- For the ganache, heat the heavy cream and pour it over the chocolate chips. Stir until smooth.
- Pour the ganache over the cooled cake and serve.
Notes
- Let the cake cool completely before adding the ganache.
- This cake can be stored in an airtight container at room temperature for 3-4 days.
