A moist and fluffy Brazilian carrot cake topped with chocolate ganache.

Ingredients

  • 2 cups grated carrots
  • 1 cup vegetable oil
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 4 large eggs
  • 1 tablespoon baking powder
  • 1/2 cup cocoa powder
  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a blender, combine grated carrots, oil, eggs, and sugar. Blend until smooth.
  3. In a large bowl, mix flour, baking powder, and cocoa powder.
  4. Pour the carrot mixture into the dry ingredients and mix until combined.
  5. Pour the batter into a greased cake pan.
  6. Bake for 40-45 minutes or until a toothpick comes out clean.
  7. For the ganache, heat the heavy cream and pour it over the chocolate chips. Stir until smooth.
  8. Pour the ganache over the cooled cake and serve.

Notes

  • Let the cake cool completely before adding the ganache.
