Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream the butter and sugar together until light and fluffy.
- Add eggs one at a time, mixing well after each addition, then add the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop tablespoon-sized amounts of dough onto the prepared baking sheet.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow cookies to cool completely on a wire rack.
- Once cooled, fill the center of each cookie with pastry cream.
- Melt chocolate chips and heavy cream together in a microwave-safe bowl, stirring until smooth.
- Drizzle or dip cookies in the chocolate glaze to finish.
Notes
- For best results, refrigerate the cookies for 30 minutes after filling them with pastry cream.
- You can use store-bought pastry cream if short on time.
- Experiment with different chocolate types for the glaze.
