- 2 cups dried navy beans
- 6 cups water
- 1/2 pound salt pork, diced
- 1/2 cup molasses
- 1/4 cup maple syrup
- 1 teaspoon dry mustard
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/2 cup onion, chopped
Instructions
- Soak the navy beans overnight in water.
- Preheat the oven to 300°F (150°C).
- Drain beans and place them in a large pot with 6 cups of fresh water.
- Bring to a boil and cook for 30 minutes, then drain again.
- In a deep, oven-safe pot, layer the beans with salt pork, molasses, maple syrup, mustard, pepper, salt, and onion.
- Cover with fresh water and bring to a simmer on the stove.
- Cover the pot and transfer to the preheated oven.
- Bake for approximately 6-8 hours, stirring occasionally and adding water as needed to keep the beans covered.
Notes
- For a smoky flavor, consider adding a piece of smoked ham hock.
- Adjust sweetness by modifying the amounts of molasses and maple syrup.
- Serve with cornbread for a classic pairing.
