- 1 cup Medjool dates, pitted
- 1 cup almond flour
- 1/4 cup blue spirulina powder
- 1/2 cup shredded coconut
- 1/4 cup almond butter
- 1/4 cup maple syrup
- 1/4 cup coconut oil, melted
- 1/2 tsp vanilla extract
Instructions
- In a food processor, blend the Medjool dates until smooth.
- Add almond flour, blue spirulina powder, shredded coconut, almond butter, maple syrup, melted coconut oil, and vanilla extract. Blend until well combined.
- Press the mixture into a lined baking dish, spreading it evenly.
- Freeze for at least 1 hour to set.
- Cut into bars and serve.
Notes
- Store bars in an airtight container in the refrigerator for up to 2 weeks.
- For a chocolate version, drizzle melted dark chocolate over the bars before slicing.
