- 2 cups chocolate cookie crumbs
- 1/2 cup unsalted butter, melted
- 4 packages (8 oz) cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 1 cup cherry pie filling
- 2 cups whipped cream
Instructions
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, combine chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a springform pan.
- In another bowl, beat cream cheese, sugar, and vanilla until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in sour cream until combined.
- Pour the cheesecake batter over the crust and bake for 55-60 minutes.
- Let it cool and then refrigerate for at least 4 hours.
- Top with cherry pie filling and whipped cream before serving.
Notes
- For a rich flavor, let the cheesecake sit overnight in the refrigerator.
