Ingredients

  • 2 cups chocolate cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 4 packages (8 oz) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1 cup cherry pie filling
  • 2 cups whipped cream

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a springform pan.
  3. In another bowl, beat cream cheese, sugar, and vanilla until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in sour cream until combined.
  6. Pour the cheesecake batter over the crust and bake for 55-60 minutes.
  7. Let it cool and then refrigerate for at least 4 hours.
  8. Top with cherry pie filling and whipped cream before serving.
