  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup sweetened shredded coconut
  • 1/2 cup coconut milk
  • 1 cup pink frosting
  • 1/2 cup shredded coconut for topping

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add to the creamed mixture alternately with coconut milk.
  5. Fold in the shredded coconut and spread the batter into the prepared pan.
  6. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  7. Let cool completely before frosting with pink frosting and sprinkling with shredded coconut.
