- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened
- 1 tablespoon lemon zest
- 2 tablespoons dried culinary lavender
- 1/4 cup lemon juice
- 1/2 teaspoon vanilla extract
- 1 jar lemon curd for filling
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together flour, confectioners’ sugar, baking powder, and salt.
- In another bowl, cream together the butter, lemon zest, and lavender.
- Gradually add the dry mixture to the wet mixture, mixing until combined.
- Roll dough into 1-inch balls and place on baking sheets.
- Make an indentation in the center of each ball and fill with lemon curd.
- Bake for 12-15 minutes until edges are lightly golden.
- Let cool before serving.
Notes
- For better flavor, chill the dough for 30 minutes before baking.
- Store cookies in an airtight container for up to one week.
