- 1 cup cooked and pureed beets
- 1/2 cup coconut oil, melted
- 1 cup brown sugar
- 1 tsp vanilla extract
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup chocolate chips
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the pureed beets, melted coconut oil, brown sugar, and vanilla extract until well combined.
- In another bowl, combine the oats, flour, baking soda, and salt.
- Gradually add the dry ingredients to the beet mixture until just combined.
- Fold in the chocolate chips.
- Drop rounded tablespoons of dough onto a lined baking sheet.
- Bake for 12-15 minutes or until the edges are golden.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
- Adjust the baking time depending on your oven’s heat.
- For a more intense beet flavor, add more beet puree.
