Ingredients

  • 1/2 cup coconut oil, melted
  • 1 cup brown sugar
  • 1 tsp vanilla extract
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the pureed beets, melted coconut oil, brown sugar, and vanilla extract until well combined.
  3. In another bowl, combine the oats, flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the beet mixture until just combined.
  5. Fold in the chocolate chips.
  6. Drop rounded tablespoons of dough onto a lined baking sheet.
  7. Bake for 12-15 minutes or until the edges are golden.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
