Ingredients

  • 1 cup grated cooked beets
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder

  • 1/2 cup sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together the grated beets, flour, baking powder, and salt.
  3. In another bowl, cream together the butter and sugar until light and fluffy.
  4. Add the egg and milk to the butter mixture, and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, stirring gently until combined.
  6. Drop spoonfuls of the batter onto a greased baking sheet.
  7. Bake for 15-20 minutes or until golden brown.
