Ingredients

  • 1 pound beef tenderloin
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, finely chopped
  • 1 teaspoon thyme
  • 1 sheet puff pastry
  • 1 egg, beaten

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Add onions and garlic; sauté until fragrant.
  3. Add chopped mushrooms and thyme; cook until the mixture is dry.
  4. Season beef with salt and pepper, then sear in a hot pan until browned.
  5. Roll out puff pastry, place mushroom mixture and beef in the center, and fold over to seal.
  6. Brush with beaten egg and cut slits for steam to escape.
  7. Bake for 25-30 minutes until golden brown.
