- 1 pound beef tenderloin
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, finely chopped
- 1 teaspoon thyme
- 1 sheet puff pastry
- 1 egg, beaten
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat. Add onions and garlic; sauté until fragrant.
- Add chopped mushrooms and thyme; cook until the mixture is dry.
- Season beef with salt and pepper, then sear in a hot pan until browned.
- Roll out puff pastry, place mushroom mixture and beef in the center, and fold over to seal.
- Brush with beaten egg and cut slits for steam to escape.
- Bake for 25-30 minutes until golden brown.

- Let the beef rest before slicing for better presentation.
- Serve with a side of gravy for dipping.
