A rich and flavorful sauce made with beef tallow.

Ingredients

  • 2 cups beef tallow
  • 1/2 cup all-purpose flour
  • 4 cups beef stock
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a saucepan, melt the beef tallow over medium heat.
  2. Add the flour and whisk continuously to form a roux, cooking for about 5 minutes until golden brown.
  3. Slowly pour in the beef stock while continuing to whisk to avoid lumps.
  4. Add salt and black pepper, stirring until the sauce thickens.
  5. Serve warm as a base for sauces or gravies.

Notes

  • Can be made ahead and stored in the refrigerator.
  • Use in place of traditional butter or oil in recipes.
