- 2 pounds beef pancreas
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 1 teaspoon thyme
- 1 teaspoon black pepper
- 1 tablespoon salt
- 1 cup heavy cream
Instructions
- Clean the beef pancreas and cut it into small pieces.
- In a large pot, sauté onions and garlic until translucent.
- Add the beef pancreas and cook until browned.
- Pour in beef broth and bring to a boil.
- Add carrots, potatoes, thyme, salt, and pepper.
- Simmer for 1 hour or until the vegetables are tender.
- Stir in heavy cream and heat through.
- Serve hot.
