- 1 beef heart
- 6 cups beef broth
- 2 onions, chopped
- 4 cloves garlic, minced
- 3 dried ancho chiles, soaked
- 1 teaspoon cumin
- 2 cans hominy, drained
- Salt to taste
Instructions
- Clean the beef heart and cut it into bite-sized pieces.
- In a large pot, sauté onions and garlic until translucent.
- Add the beef heart pieces and cook until browned.
- Add the soaked ancho chiles, cumin, and beef broth. Bring to a boil.
- Reduce heat and simmer for 2 hours, or until the beef heart is tender.
- Stir in the hominy and cook for an additional 20 minutes.
- Season with salt and serve hot.
Notes
- For added flavor, top with sliced radishes, cilantro, and lime.
- This dish can be made ahead and reheated for serving.
