A hearty and flavorful pozole made with beef heart, perfect for a comforting meal.

Ingredients

  • 1 beef heart
  • 6 cups beef broth
  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 3 dried ancho chiles, soaked
  • 1 teaspoon cumin
  • 2 cans hominy, drained
  • Salt to taste

Instructions

  1. Clean the beef heart and cut it into bite-sized pieces.
  2. In a large pot, sauté onions and garlic until translucent.
  3. Add the beef heart pieces and cook until browned.
  4. Add the soaked ancho chiles, cumin, and beef broth. Bring to a boil.
  5. Reduce heat and simmer for 2 hours, or until the beef heart is tender.
  6. Stir in the hominy and cook for an additional 20 minutes.
  7. Season with salt and serve hot.

Notes

  • For added flavor, top with sliced radishes, cilantro, and lime.
