Ingredients

  • 2 sheets puff pastry
  • 1 cup basil pesto
  • 2 cups shredded mozzarella cheese
  • 1 egg (beaten, for egg wash)
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon pine nuts

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry and cut it into a Christmas tree shape.
  3. Spread the basil pesto evenly on the puff pastry.
  4. Sprinkle the mozzarella cheese and Parmesan cheese over the pesto.
  5. Place the second puff pastry sheet on top and cut out the tree design again.
  6. Brush the top with the beaten egg.
  7. Sprinkle pine nuts on top.
  8. Bake for 20-25 minutes or until golden brown.
  9. Allow to cool slightly before serving.

Notes

  • For a twist, add some sun-dried tomatoes or olives to the cheese mixture.
  • Serve with additional pesto for dipping.
