- 2 ripe bananas, mashed
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour

- 1/2 cup chopped pecans
- 1/2 cup sour cream
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
- In a large bowl, cream together the sugar and butter until smooth.
- Beat in the eggs one at a time, then stir in the vanilla and mashed bananas.
- In a separate bowl, mix the flour, baking soda, and salt.
- Gradually add the dry ingredients to the banana mixture, alternating with sour cream, and mix until just combined.
- Fold in the chopped pecans.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- For a richer flavor, add a cream cheese frosting.
