- 2 ripe bananas
- 1 cup rolled oats
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/4 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, mash the ripe bananas until smooth.
- Add the rolled oats, almond butter, honey or maple syrup, vanilla extract, cinnamon, and baking soda. Mix until well combined.
- If using, fold in the chocolate chips.
- Scoop tablespoons of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- Store cookies in an airtight container at room temperature for up to a week.
- For a vegan option, use maple syrup instead of honey.
- Feel free to add nuts or dried fruits for extra flavor and texture.
