Delicious and healthy banana oat cookies that are easy to make and perfect for snacks.

Ingredients

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add the rolled oats, almond butter, honey or maple syrup, vanilla extract, cinnamon, and baking soda. Mix until well combined.
  4. If using, fold in the chocolate chips.
  5. Scoop tablespoons of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes or until the edges are golden.
  7. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
