- 2 pounds purple potatoes
- 1/4 cup balsamic vinegar

Instructions
- Preheat the oven to 400°F (200°C).
- Wash and cut the purple potatoes into quarters.
- In a large bowl, combine balsamic vinegar, olive oil, garlic powder, salt, and black pepper.
- Add the purple potatoes to the bowl and toss until evenly coated.
- Spread the potatoes in a single layer on a baking sheet.
- Bake for 25-30 minutes, or until fork-tender and golden brown.
- Remove from the oven and sprinkle with fresh parsley before serving.
