Ingredients

  • 1 pound fresh salmon, skin removed
  • 1/2 cup breadcrumbs
  • 1/4 cup parsley, chopped
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the salmon, breadcrumbs, parsley, egg, garlic, Dijon mustard, lemon zest, salt, and pepper.
  3. Mold the mixture into meatballs and place them on a baking sheet lined with parchment paper.
  4. Drizzle olive oil over the meatballs.
  5. Bake for 15-20 minutes or until cooked through.
  6. Serve with your favorite dipping sauce.
