- 4 medium courgettes
- 200 grams Emmental cheese, grated
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cloves garlic, minced
- 1/4 cup breadcrumbs
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat the oven to 180°C (350°F).
- Slice the courgettes in half lengthwise and scoop out some of the flesh.
- In a bowl, mix the grated Emmental cheese, olive oil, salt, pepper, garlic, breadcrumbs, and parsley.
- Fill the courgette halves with the cheese mixture.
- Place the stuffed courgettes on a baking tray and bake for 25-30 minutes until the cheese is bubbly and golden.
- Serve warm.
Notes
- For a vegetarian version, ensure breadcrumbs are also vegetarian.
