A delicious combination of baked courgettes and melted Emmental cheese, perfect as a side dish or a light meal.

Ingredients

  • 4 medium courgettes
  • 200 grams Emmental cheese, grated
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1/4 cup breadcrumbs
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Slice the courgettes in half lengthwise and scoop out some of the flesh.
  3. In a bowl, mix the grated Emmental cheese, olive oil, salt, pepper, garlic, breadcrumbs, and parsley.
  4. Fill the courgette halves with the cheese mixture.
  5. Place the stuffed courgettes on a baking tray and bake for 25-30 minutes until the cheese is bubbly and golden.
  6. Serve warm.

Notes

  • For a vegetarian version, ensure breadcrumbs are also vegetarian.
