Delicious and fluffy pancakes made with yogurt and fresh apples, perfect for a breakfast treat.

Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup plain yogurt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup finely chopped apples
  • 2 tablespoons melted butter

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, mix the yogurt, egg, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Fold in the chopped apples and melted butter.
  5. Heat a skillet over medium heat and coat with cooking spray or butter.
  6. Pour about 1/4 cup of batter onto the skillet for each pancake.
  7. Cook until bubbles form on the surface, then flip and cook until golden brown.
  8. Serve warm with syrup or yogurt.

Notes

  • These pancakes can be stored in the refrigerator for up to 2 days.
  • For a healthier option, substitute whole wheat flour for all-purpose flour.
