- 1 cup plain yogurt
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup finely chopped apples
- 2 tablespoons melted butter
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix the yogurt, egg, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the chopped apples and melted butter.
- Heat a skillet over medium heat and coat with cooking spray or butter.
- Pour about 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- Serve warm with syrup or yogurt.
Notes
- These pancakes can be stored in the refrigerator for up to 2 days.
- For a healthier option, substitute whole wheat flour for all-purpose flour.
