Instructions

  1. Begin by preheating your oven to 325°F (163°C) and prepare a 9-inch springform pan by greasing it lightly.
  2. In a bowl, mix together the crushed graham crackers, melted butter, and sugar until the mixture resembles wet sand. Firmly press this mixture into the base of the springform pan to create a solid crust.
  3. In a large bowl, use an electric mixer to whip the softened cream cheese until it’s silky and smooth. Gradually incorporate the sugar, mixing until fully blended.
  4. Add the vanilla extract, followed by the eggs one at a time, mixing well after each addition. Sprinkle in the cinnamon and blend until the mixture is uniform.
