- 1 ½ cups crushed graham crackers

- 2 cups diced apples (approximately 2 medium-sized)
- 1 tablespoon fresh lemon juice
- ½ cup creamy sour cream
Instructions
- Begin by preheating your oven to 325°F (163°C) and prepare a 9-inch springform pan by greasing it lightly.
- In a bowl, mix together the crushed graham crackers, melted butter, and sugar until the mixture resembles wet sand. Firmly press this mixture into the base of the springform pan to create a solid crust.
- In a large bowl, use an electric mixer to whip the softened cream cheese until it’s silky and smooth. Gradually incorporate the sugar, mixing until fully blended.
- Add the vanilla extract, followed by the eggs one at a time, mixing well after each addition. Sprinkle in the cinnamon and blend until the mixture is uniform.
- In another bowl, coat the diced apples with lemon juice to keep them fresh. Gently fold the apple pieces into the cream cheese mixture, being careful not to break them apart.
- Carefully pour the cheesecake mixture over the prepared crust, using a spatula to ensure an even surface.
- Bake the cheesecake in the oven for 50-60 minutes, or until the edges are golden and the center is just slightly wobbly.
- Once baked, allow the cheesecake to cool at room temperature for about an hour. Then transfer it to the refrigerator to chill for a minimum of 4 hours or overnight for the best texture.
- Just before serving, spread a layer of sour cream on top of the cheesecake to enhance its creaminess and flavor profile.

- For an extra indulgent touch, drizzle caramel sauce on top before serving.
