Delicious stuffed dates resembling the classic Almond Joy candy bar, filled with almonds and coconut for a sweet treat.

Ingredients

  • 12 Medjool dates
  • 1 cup shredded coconut
  • 12 whole almonds
  • 1/2 cup dark chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Carefully slice each date open and remove the pit.
  3. Stuff each date with shredded coconut and press an almond into the coconut.
  4. In a microwave-safe bowl, melt dark chocolate chips and coconut oil until smooth, stirring every 30 seconds.
  5. Dip each stuffed date into the melted chocolate, making sure to coat evenly.
  6. Place the chocolate-dipped dates on a parchment-lined baking sheet.
  7. Chill in the refrigerator until the chocolate is set.
  8. Serve and enjoy!

Notes

  • For a nut-free version, omit the almonds.
