- 12 Medjool dates
- 1 cup shredded coconut
- 12 whole almonds
- 1/2 cup dark chocolate chips
- 1 tablespoon coconut oil
Instructions
- Preheat your oven to 350°F (175°C).
- Carefully slice each date open and remove the pit.
- Stuff each date with shredded coconut and press an almond into the coconut.
- In a microwave-safe bowl, melt dark chocolate chips and coconut oil until smooth, stirring every 30 seconds.
- Dip each stuffed date into the melted chocolate, making sure to coat evenly.
- Place the chocolate-dipped dates on a parchment-lined baking sheet.
- Chill in the refrigerator until the chocolate is set.
- Serve and enjoy!
Notes
- For a nut-free version, omit the almonds.
- Store leftovers in an airtight container in the fridge.
