  • 1 pound chicken breast, diced
  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon olive oil

Instructions

  1. In a bowl, combine almond flour, Parmesan cheese, garlic powder, oregano, salt, black pepper, and red pepper flakes.
  2. In another bowl, beat the eggs.
  3. Dip the chicken pieces into the eggs, then coat them in the almond flour mixture.
  4. Preheat the air fryer to 400°F (200°C).
  5. Spray the air fryer basket with olive oil.
  6. Arrange the chicken bites in the basket in a single layer.
  7. Spray the tops with more olive oil.
  8. Cook for 10-12 minutes, flipping halfway through, until golden brown and cooked through.
