Instructions
- Cook the rice noodles according to package instructions.
- In a large pan, combine red curry paste, coconut milk, vegetable broth, and soy sauce. Bring to a simmer.
- Add the mixed vegetables and cook until tender.
- Toss in the cooked noodles and lime juice. Stir to combine.
- Serve hot, garnished with fresh basil.
